80% Gamay, 20% Syrah. The Gamay grapes come from vineyards owned and farmed by Patrick Bouju and Justine Loiseau, on the
southern end of the Beaujolais appellation.

The grapes come from 40-50-year-old vines planted on terroir of Red Clay and Limestone. The grapes undergo
maceration for a few days.

The Syrah grapes are from Roussillon, near the town of Canet, farmed by organic grower Vincent Lafage. The grapes are 35
years of age, planted on terroir of rolled pebbles on red clay.

The Syrah grapes underwent direct press.

The wine is bottled while fermentation is still taking place and aged until disgorgement.

There was no fining, filtering, or SO2 added during any phase of winemaking. The harvesting, vinification, and elevage was
done by Patrick Bouju and Justine Loiseau.

ABV is 11%.
